Banana Bread French Toast

This Mother's Day I thought it was only fitting to share a recipe inspired by own Mother-In-Law: Banana Bread French Toast. It's everything you love about Belly's classic banana bread, combined with the nostalgic flavors of french toast. Whether you're spending the day with family or carving out a quiet morning for yourself, this recipe is the perfect way to celebrate you. 🩷 

What You'll Need:

  • One package of Belly's Classic Banana Bread Mix
  • 5 eggs
  • 2 bananas - the more ripe, the better!
  • 1/3 C oil (we used avocado oil!)
  • 1/3 C dairy or non-dairy milk
  • 1 tsp ground cinnamon

Instructions:

  1. To make this recipe, begin by making a loaf of Belly's Classic Banana Bread by preheating the oven to 350F and lining a bread pan with parchment paper.
  2. In a medium mixing bowl, peel and mash the bananas until smooth.
  3. Add 3 eggs, 1/3 C oil and 1/3 C milk. Whisk to combine.
  4. Add one bag of Belly's Classic Banana Bread Mix. Stir to combine.
  5. Transfer the batter to the prepared bread pan. Bake for 45-55 minutes or until a toothpick inserted in the middle comes out clean.
  6. Allow bread to cool before slicing. 
  7. Prepare the egg bath by whisking the remaining eggs and cinnamon in a shallow bowl.
  8. Dip a piece of banana bread into the egg bath. Turn over and dip the other side so both sides are fully coated.
  9. Transfer the bread to a heated and greased pan and cook over medium heat, flipping half way through. Repeat steps 8 & 9 with the remaining pieces of bread. 
  10. Top french toast with desired toppings (a drizzle of maple syrup, fresh banana slices, etc.) and enjoy! 🩷

Rarely do we make Belly's Classic Banana Bread without adding a cup of chocolate chips or crushed walnuts. Get creative and add whatever additions your family loves!
