Recipe of the Month - Pumpkin Pancakes

Get ready to FALL in love (pun intended) with our collagen pumpkin pancakes! Made with real pumpkin, these pancakes are the perfect addition to your fall breakfast line-up.

Pumpkin Pancakes

What You'll Need:

1 C - Belly Collagen Pancake Mix

2 eggs

1/3 C Pumpkin Puree

3 TBSP water

1/2 t pumpkin pie spice

1/2 t pure vanilla extract

Toppings of your choice!


In a medium mixing bowl, combine the eggs, pumpkin puree, water and vanilla extract. Whisk to combine.

In the same bowl, add the Belly Collagen Pancake Mix and pumpkin pie spice. Continue whisking until all ingredients are combined.

Over medium heat, prepare a griddle or large skillet with butter, oil or non-stick spray.

Spoon the batter onto the heated skillet. Once the batter starts to bubble, flip and cook the other side.

Place pancakes on a plate and top with your desired toppings! We love a drizzle of pure maple syrup on ours!
