Recipe of the Month - Peppermint Brownie Bites

Not to be dramatic but this might just be the best thing you eat this holiday season! Gooey brownies with the perfect hint of peppermint and a crunchy candy-cane topping. We can't stop eating these! Peppermint Brownie Bites

What You'll Need:

1 bag - Belly Collagen Brownie Mix

2 eggs1/2 C (1 stick) of butter or oil, melted

1 tsp vanilla extract

1 tsp peppermint extract

Toppings (optional): Red or green frosting

Candy Canes Festive cookie cutters (optional but definitely more fun!)


Pre-heat the oven to 350 F and line an 8 x 8 baking dish with parchment paper.

In a medium mixing bowl, combine the eggs, melted butter or oil, vanilla extract and peppermint extract. Whisk to combine.

In the same bowl, add the Belly Collagen Brownie Mix. Continue whisking until all ingredients are combined. Pour the brownie mixture into the prepared baking dish and use a spatula to spread the batter evenly throughout.

Bake the brownies for 24-28 minutes or until a fork inserted in the middle comes out clean.

Remove brownies from the oven and allow to cool completely before cutting (about 30 mins).

Using a cookie cutter (or a knife) cut the brownies. Drizzle with frosting and top with bits of crushed up candy cane.
