Recipe of the Month - Protein Banana Pancakes

After another successful holiday season in the books, I know many of you are feeling motivated to fuel your body with healthy choices and get your eating habits back on track. The good news? Pancakes can (and should!) be part of a healthy, protein packed breakfast. Especially when they are overflowing with quality, clean ingredients like grass-fed bovine collagen peptides and sweet bananas.

Protein Banana Pancakes

(makes ~6 pancakes)

What You'll Need:

  • 1/4 C - Belly Collagen Pancake Mix
  • 1/4 C - Vanilla Protein Powder
  • 1 ripe banana
  • 1 egg
  • 3 TBSP milk - regular or dairy-free
  • Toppings of your choice!

Instructions:

  1. Using a fork, in a medium mixing bowl, mash a peeled banana until smooth.
  2. Add the egg and 3 TBSP of milk. Whisk to combine.
  3. In the same bowl, add the Belly Collagen Pancake Mix and vanilla protein powder. Continue whisking until all ingredients are combined.
  4. Over medium heat, prepare a griddle or large skillet with butter, oil or non-stick spray.
  5. Spoon the batter onto the heated skillet. Cook over medium (not high!) heat. The batter will be denser than traditional pancake batter because of the banana so the pancakes may take longer to cook through the middle. Cooking over a lower heat will prevent the outside from being over cooked and the inside undercooked.
  6. Once the batter starts to bubble, flip and cook the other side.
  7. Place pancakes on a plate and top with your desired toppings! We love a drizzle of nut butter and pure maple syrup on ours!
